What started as a quiet café corner soon evolved into something more deliberate — a place where technique and taste meet patience. At Hilltop Studio, our counter became a space of rhythm: lamination, proofing, and the gentle crackle of golden layers as each croissant leaves the oven.

Often mistaken for simple pastries, viennoiserie sits at the crossroads between bread and pastry — a craft that demands precision and time.

It begins with the same discipline as baking bread but introduces butter, milk, and lamination — that delicate folding of dough and butter that gives each bite its flake and lift.
